Rice subsidies and curbs are hard to swallow

In Niigata, a region known as “the home of rice,” efforts are under way to build a business out of turning rice into bread.

Mai World 21, a cooperative association established to promote rice flour consumption, is using newly developed technology to mill rice into very fine flour which is then used for bread, pasta, cakes and cookies.
