A few years back, on one of those bitter english winter evenings best kept at bay by a big log fire and a good single malt, conversation turned to celebrating our early March wedding anniversary. I suggested a favourite restaurant. “Rubbish,” came the retort, “we shall spend the day in Iceland.”
