Poultry sales have slumped, hygiene lapses have been exposed and it remains unclear how bird flu found its way to Bernard Matthews’s turkey flock.

But Mr Matthews, the 76-year old founder of the turkey empire, does not seem to feel any pressure to explain. He is nowhere to be found.
