I recently met someone who has done just that. Helena Hudson spent years in a media buying agency and when it was sold she saw this as a perfect opportunity to work in her home town of Brighton. She thought there might be a need for a restaurant that also featured a delicatessen and bakery, similar to those she had seen in London.
